Halloween 2017

Halloween always falls on quarter end for me... so we tried to make the best out of it this year. Especially since we get kids that come trick or treating. Candice and I even decorated our desks and we painted pumpkins to have on our desk. We had fun.



When we went to go pick up dinner for the team, there was a great sunset happening... so I told Candice that she needed to pull over so that I could get a picture... cause you know... me and sunsets. Worth it!!



Anyway... the team wanted to do a simple team costume. So we came up with the idea of doing Pac Man. Our boss, Jeri, was Mrs. Pacman and we were all the ghosts in the game. We were going to put dots all over the floors because the cubicles look like maze, but we didn't get around to that. It was a big accomplishment that we even all "dressed up" aka... Candice and I cut out most of the ghosts for other people. ha ha. Better than nothing I guess.

Halloween Dinner for the Kids - Take 7


I have said this before, but I think I love this tradition more than the kids do. So glad Kristy started it and that my mom is happy to play along.




Kristy brought the snake rolls. Super cool.


My mom did the bulk of the dinner. Anything that isn't already halloween themed.. gets bugs in it to fit the dinner. The show stopper was the zombie lasagna. Good work mom!


I volenteered to make the dessert because we were also celebrating Calvins birthday. I made a Jack Skelington Cake. How did I do? ha ha... can you tell what it is? I tried.


Great dinner. Always fun to see the new things we come up with every year. Can't wait to see what we do next year.

I guess I should date him...

I had plans with Austin. We have only been out a couple times and I am still trying to decide how I feel about him. I flaked on our plans because I was having bad cramps. So he came over with flowers and chocolates and meds. What? I feel like when a guy does that... you should probably give him a chance. So I guess I will....

Hruska's Hogwarts Halloween



I love Hruska's Kolache's... so when I found out they were doing a Harry Potter day, I decided I was going and I convinced Candice to come with me. We waited in quite the line... but it was worth it. I love getting all festive for holidays.

Masked Carved Pumpkins

Got my mom to carve pumpkins with me. I don't think it is her favorite thing to do... but she was nice enough to do it with me because I wanted to. I have less and less friends the older I get, so my family has to put up with all the stuff I want to do.

We both like how they turned out though. Pretty cute huh? Different take on carving pumpkins.

Halloween Nights


I love that Utah has so many events and festivals. So much to do and see around the holidays and I love it. Halloween Nights is a new event they added that is held at the fairgrounds in SLC. It was kind of pricey... but I was glad that I went. Not sure I will go every year... but maybe every couple years. We shall see.


Here is a summary if what was there. There were cool pumpkin carvings...



And lots of themed pumpkin passages.





There was an area with an outdoor movie and place you good buy food and treats. I loved that they were playing Harry Potter.


My favorite was the entry/exit though. The entire thing with lit pumpkins... was quite magical.



It was a fun festive event to go to.

Cauliflower Cheeseburger Casserole

I was testing out some Keto recipes to try and be a little healthier...  I really liked this one.

Cauliflower Cheeseburger Casserole

1lb lean ground beef
1 large head of cauliflower
2 tbsp flour
2 tbsp butter
1 1/2 cups milk
1 1/2 cups cheddar cheese, grated
seasoning salt, to taste


Instructions:

In a large skillet over medium heat, cook ground beef until browned. Drain any excess fat.

Cut the cauliflower into florets, and steam them for about 5 minutes, until tender on the outside but still crisp in the middle.

In a saucepan, melt butter over medium heat. Sprinkle in the flour and whisk together.

Slowly whisk in the milk, and continue to whisk until the mixture comes to a boil and begins to thicken.

Once thickened, remove sauce from heat and stir in 1 cup of cheddar cheese.

Add seasoning salt, to taste

Combine beef, cauliflower and cheese sauce. Taste and add another pinch of seasoning salt if desired.

Pour mixture into a casserole dish, and sprinkle with the remaining 1/2 cup of cheese

Bake at 350 degrees for 20 minutes

Flake Family

I promised Tyler and Shantelle that I would take some family photo's for them. We got kind of a late start so we didn't have great light for very long. I got some. They are a cute family and they cooperate pretty well for photos so they aren't hard to photograph.




But then the sky changed. This was the last photo I took and told them the lighting was no good and that I had a different idea because there was an AMAZING sunset happening right now.


So I told them to all go hold hands and stand in front of the sunset. This would be easy for the kids because they didn't even have to smile! And guess what? I LOVE how this turned out. This so me is the framer out of all the ones I took. This is pure luck. You can't plan these sunsets. One day I want a family picture like this.
