30 Minute Rolls

Since one of my new year goals was to make more things that I pin on pinterest, I got really excited and decided to make a whole meal of recipes I pinned on pinterest. I made cilantro lime chicken in the crockpot, which didn't turn out that well so I won't make it again and won't blog about it. I also made a dessert that was supposed to be a chocolate mousse out of coconut milk... it was an epic fail so I didn't even serve it nor will I blog about it or make it again. The other two things I made were really good, so I will blog about it. I made dinner rolls that only take 30 minutes from start to finish to make. Impressive right? I love good things that can be made quickly. I already made them again after this dinner.  They are heavy... but they are good!


30 Minute Rolls
1 C plus 2 Tbsp warm water
1/3 C oil
2 Tbsp yeast
1/4 C sugar
1 1/2 tsp salt
1 egg
3 1/2 C bread flour (seems to work better but all purpose flour will also work)
Heat oven to 400 degrees.
In your mixer bowl combine the water, oil, yeast and sugar and allow it to rest for 15 minutes.  Using your dough hook, mix in the salt, egg and flour.  Knead with hook until will incorporated and dough is soft and smooth. (Just a few minutes)
Form dough into 12 balls and then place in a greased 9 x 13 pan and allow to rest for 10 minutes.  Bake for 10 minutes at 400 degrees or until golden brown.

Yay for quick rolls!
By the way, I tried something with coconut milk too, making whipped cream out of it. It didn't really work. But I keep trak of every recipe I make on Pinterest regardless (on a "Recipes I've Tried" board) because I want to remind myself and let other people know how they went.
