Curried Sweet Potato Soup

Found this recipe on Pinterest. Looked good and pretty healthy so I thought I would give it a try. I LOVED it. Such great flavor. Tasted just like the soup I got at Station 22!

If you like curry... and creamy soup, give this a try. I will be making it again for sure.


Curried Sweet Potato Soup

(Makes approximately 8 cups)

Ingredients:

  • 3 pounds sweet potatoes, peeled and cut into chunks
  • 4 cups low sodium chicken broth
  • 1 (15 ounce) can light coconut milk
  • 1 small apple
  • 1 teaspoon nutmeg
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper (optional)
  • 1/2 teaspoon sea salt
  • 1 teaspoon onion powder
  • 1 tablespoon curry powder

Directions:

  1. Place all ingredients into a large soup pot and bring to a medium boil.
  2. Cook at a medium boil until the apples and sweet potatoes are soft.
  3. Using a hand blender, blend the soup until smooth directly in the soup pot you just cooked it in. If you don’t have a hand blender, you’ll have to transfer the contents to a regular blender a little at a time. Be careful, it’s hot!

Get in my belly! I have all the stuff for this... I might make it tonight for dinner since Dan will be gone. We shall see if it gives Ezra gas or something. I hope not. I haven't eaten curry since breastfeeding yet. (TMI? Sorry.)
